Our 2019 Blaufränkisch Rosé is the first expression in our attempts to expose this varietal’s potential in producing the perfect Rosé. Comprised of 100% Blaufränkisch, a cool climate red grape common in Austria. Upon picking the fruit was chilled overnight, and the following morning destemmed into tank and held on its skins for a 24 hour cold soak at 40 degrees to lightly bleed out the color from the skin of the grape. The grapes were then pressed off to its light pink hue and fermented in stainless steel slowly at low temperatures over the course of four weeks as to preserve the delicate aromas that can be lost in a hot rapid fermentation. After fermentation the wine was held on its lees for 6 months to encourage further structure and non-fruit aroma development. The resulting wine is fresh and acidic in style while not being linear on the palate, with a soft red fruit and floral nose. The body is backed up with a texture that’s weight will make itself present throughout the palate. Enjoy chilled but not so cold that the aromatic profile is locked away.
