Tasting Notes

Shows a little whiff of positive Aussie/Clare Valley reduction on opening despite its age (fresh tennis balls). Aromatics become more honeyed and secondary with aeration, but still retain a bit of apple blossom floral freshness. Botrytis spice around the edges.                                                                                                                                                                        A tactile wine on the palate, rounded slightly with age, carrying through some of the honeyed character from the nose with notable phenolic structure powering through on the finish, accented with pear nectar and tarte tatin flavors.

Fresh white fish minimally adorned.  Perhaps butter poached Sole or Flounder
