Tasting Notes

Not as forward as the dry bottling, but still has lovely, subtle aromatic complexity, showing some lemon zest, starfruit, and beeswax character as it opens up in the glass. This is a white with serious structure—a white for red wine drinkers—and it grabs onto the palate and absolutely won't let go. Petit Manseng's signature acidity keeps that structure from weighing the wine down, and carries some mouthwatering pineapple fruit through to the finish. This is a tricky one as far as aging goes. I would assume that the low pH will sustain it for several years, but I actually like this in its current, youthfully chewy form.

Food Pairing

Ahi tuna steaks with a miso glaze.
